Roasted Asparagus

Going to be short and sweet a with Roasted Asparagus. Your best bet is to use this as a side dish, but feel free to whip it up as an afternoon snack as well (which is what I just did!). If you have a toaster oven, go ahead and use that instead of the real oven. Take this post as a friendly reminder that asparagus is delicious, easy to make and good for you. Best part – no clean up.
Recipe
Serving Size (2 people)
Estimated time: 15 minutes
Ingredients:
- 1 bunch of fresh asparagus
- 1 tablespoon olive oil
- 2 teaspoons salt
- fresh ground black pepper
- plain bread crumbs (optional)
- grated parmesan cheese (optional)
*green highlight denotes ingredients you will likely need to buy fresh while black text includes ingredients you should either have stocked in your pantry or ingredients that have a lengthy shelf life.
What You’ll Need:
- baking sheet or shallow baking pan
Directions:
- preheat oven to 400 F
- wash asparagus and cut the bottom 1-2″ off the stems (and discard)
- lay asparagus flat on a baking pan (lined w/aluminum foil)
- drizzle olive oil and sprinkle salt/pepper
- generously toss the asparagus with your hands mixing everything together
- bake in oven for 15 minutes
- after 15 minutes, sprinkle bread crumbs and parmesan cheese and cook for another 3 minutes

Love roast asparagus. I made some roast asparagus tossed with olive oil, mushrooms and garlic. They were delish.
