Roasted Asparagus

No stories or walks down memory lane today. Going to be short and sweet a with Roasted Asparagus. Your best bet is to use this as a side dish, but feel free to whip it up as an afternoon snack as well (which is what I just did!).  If you have a toaster oven, go ahead and use that instead of the real oven. Take this post as a friendly reminder that asparagus is delicious, easy to make and good for you. Best part – no clean up.


Serving Size (2 people)

Estimated time: 15 minutes


  • 1 bunch of fresh asparagus
  • 1 tablespoon olive oil
  • 2 teaspoons salt
  • fresh ground black pepper
  • plain bread crumbs (optional)
  • grated parmesan cheese (optional)
*green highlight denotes ingredients you will likely need to buy fresh while black text includes ingredients you should either have stocked in your pantry or ingredients that have a lengthy shelf life.

What You’ll Need:

  • baking sheet or shallow baking pan


  1. preheat oven to 400 F
  2. wash asparagus and cut the bottom 1-2″ off the stems (and discard)
  3. lay asparagus flat on a baking pan (lined w/aluminum foil)
  4. drizzle olive oil and sprinkle salt/pepper
  5. generously toss the asparagus with your hands mixing everything together
  6. bake in oven for 15 minutes
  7. after 15 minutes, sprinkle bread crumbs and parmesan cheese and cook for another 3 minutes

  3. Love roast asparagus. I made some roast asparagus tossed with olive oil, mushrooms and garlic. They were delish.
